Favorite make-ahead breakfast casserole

Make this Sunday morning for breakfast, eat the leftovers throughout the week for your breakfast!

INGREDIENTS

  • 1 package of shredded hash browns 

  • 12 eggs

  • 1 package of ham, diced 

  • 1 bag of fresh spinach  

  • 1 large tomato, diced 

  • Your favorite herb on hand or green onions 

  • Goat cheese or cheddar cheese (or no cheese)

  • Salt & pepper to season

DIRECTIONS

  1. Preheat the oven to 350°

  2. Use butter or avocado oil spray to grease a 9 x 13 inch pan.

  3. Pour bag of hash browns into greased pan.

  4. Whisk eggs, season with salt & pepper.  Stir in diced ham, spinach, diced tomatoes.  Pour on top of hashbrowns in the pan.  Top with goat or cheddar cheese and herbs.

  5. Bake in the oven until the center is firm, about ~30 - 35 minutes.
